Ingredients:
- 1 grass-fed lamb rack (6 bones)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
Instructions:
1. Prep the Lamb: Preheat your oven to 200°C. Pat the lamb rack dry and season generously with salt and pepper.
2. Herb Mixture: In a small bowl, mix olive oil, garlic, rosemary, and thyme. Rub this mixture all over the lamb.
3. Sear the Rack: In a hot oven-safe skillet, sear the lamb rack on medium-high heat for 2-3 minutes on each side until browned.
4. Roast: Transfer the skillet to the oven and roast for 15-20 minutes for medium-rare. Use a meat thermometer to check for 54°C.
5. Rest: Let the lamb rest for 5 minutes before slicing between the bones.
6. Serve: Plate with your favourite sides and enjoy a luxurious but simple meal!
